Salsa Verde con Tomatillos Chicken Tacos

Ingredients

  • 2 cups cooked, shredded chicken
  • 1/2 cup Kathy’s Jars Salsa Verde con Tomatillos
  • Small corn or flour tortillas
  • Toppings: diced onions, cilantro, sliced avocado, and crumbled queso fresco

Instructions

  1. In a skillet, warm the shredded chicken and mix with Salsa Verde con Tomatillos until heated through.
  2. Fill each tortilla with the chicken mixture.
  3. Top with onions, cilantro, avocado, and queso fresco.
  4. Serve with extra salsa on the side for added flavor.

Red Cabbage Compote Grilled Cheese Sandwich

Ingredients

  • 2 slices of sourdough or rye bread
  • 1 tbsp butter
  • 2 tbsp Kathy’s Jars Red Cabbage Compote
  • 2 slices of your favorite cheese (Gruyere or Swiss work well)

Instructions

  1. Butter one side of each bread slice.
  2. Place one slice of bread, butter side down, in a heated skillet. Layer with cheese, Red Cabbage Compote, and the second slice of cheese.
  3. Top with the second slice of bread, butter side up.
  4. Grill until bread is golden and cheese is melted, about 3-4 minutes on each side.
  5. Slice and serve warm.

Habanero Mango Glazed Salmon

Ingredients

  • 2 salmon fillets
  • Salt and pepper, to taste
  • 1/4 cup Kathy’s Jars Habanero and Mango Sauce
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season the salmon fillets with salt and pepper.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. Sear salmon fillets for 2 minutes on each side.
  4. Brush the fillets generously with Habanero and Mango Sauce.
  5. Transfer skillet to the oven and bake for 8-10 minutes, or until salmon is cooked through.
  6. Serve with a side of rice or salad.
